Authentic Southern Thai Milk Tea (Cha-Yen) Recipe

Ingredients
- Southern Red Tea (Bluemocha Blend) 2 tbsp
- Hot Water 175 ml. (to yield 120ml of extracted tea)
- Non-Dairy Creamer 1 tbsp
- Fresh Milk 60 ml.
- Sweetened Condensed Milk 40 ml.
- Ice Cubes
Brewing Instructions
- Steeping : Steep 2 tablespoons of Southern Red Tea in 175 ml. of hot water for 3–5 minutes.
- Pulling (The “Teh Tarik” Technique) : Pour the tea back and forth between two containers 3–4 times. This “pulling” technique aerates the tea, fully releasing its unique aroma and bold flavor.
- Filtering : Strain the tea leaves to obtain exactly 120 ml. of concentrated tea liquor.
- Mixing : Add the non-dairy creamer, sweetened condensed milk, and fresh milk into the hot tea. Stir until well combined and smooth.
